Choclate Vanila Croissants Recipe

 Ingredients
- All-purpose flour 550 g / ½ cup
- Yeast 20 g
- Sugar 60 g /1/4 cup
- Salt 1 tsp
- Milk 140 g /3/4 cup
- Water 115 g
- Butter 100 g
- Butter 250 g (room temperature)
Ingredients for Custard Cream
- Sugar 100 g
- Custard slurry (custard powder 50 g + milk 1/2 cup)
- Dairy Cream 1 cup
Ingredients for Chocolate Ganache
- Dairy Cream 1 cup
- Dark chocolate 1/2 cup
Ingredients for Croissants
- Prepared dough
- Prepared chocolate ganache
- Prepared custard cream
- Melted chocolate
- Almonds (chopped) as required
DIRECTIONS
In a bowl add flour, salt, yeast, sugar and mix it well. Add butter and mix it again. Add water and knead a smooth dough. Wrap it well and rest until it doubles in size.
In a zip lock bag add butter and flatten it with a rolling pin. Freeze it in the freezer.
In a pot heat milk and add sugar. cook until sugar dissolves.Add custard slurry and cook until it thickens.
Add Dairy Cream and mix it well. Set aside
In a bowl add Dairy Cream and microwave it for a minute. add dark chocolate. Mix it until it melts. Set aside.
Take the prepared dough and flatten it with the rolling pin. Now place frozen butter on it and wrap the dough around it. Cut the uneven edges.
Flatten it with the rolling pin and wrap it to make square. Sprinkle flour on it while wrapping. Refrigerate it for 30 mins and then repeat this step twice.
Now flatten it again with the rolling pin, remove the uneven edges, and cut the strips from the dough.
Roll these strips to make swiss roll shape, place it on a greased baking pan and bake it in a preheated oven at 170-180 degrees for 15-20 mins. Flip the croissants while baking after every 5 mins.
Now make a hole in them, fill them with custard cream and prepared chocolate ganache. Top them with chocolate ganache, melted chocolate and almonds. Your Vanila Chocolate Croissants are ready.
