Hearty Chicken Chili with Savory Fried Rice

 Ingredients for Chicken Preparation
Chicken strips (boneless) 1 kg
Chili sauce 2 tbsp
Egg 1
Corn flour 2 tbsp
Red chili flakes 1 tbsp
Vinegar 1 tbsp
Salt 1/2 tsp
Black pepper powder 1/2 tsp
Oil 2 tbsp
Oil (for frying) as required
Ingredients for Stock mixture Preparation
Chicken stock 2 cups
Chili sauce 2 tbsp
Thai chili sauce 2 tbsp
Oyster sauce 1 tbsp
Red chili flakes 1 tbsp
Black pepper powder 1 tsp
Salt 1/2 tsp
Ingredients for White Chili Chicken Preparation
Oil 3 tbsp
Ginger (chopped) 1 tbsp
Garlic (Chopped) 1 tbsp
Green chilies 1 cup
Fried chicken
Prepared chicken stock mixture
Slurry (corn flour 2 tbsp + water 1/2 cup)
Ingredients for Vegetable Fried Rice
Oil 2 tbsp
Garlic (chopped) 1 tbsp
Capsicum (chopped) 1 cup
Carrot (chopped) 1 cup
Boiled rice 3 cups
Salt 1 tsp
Black pepper powder 1 tsp
Green onion (chopped) 1/2 cup
Direction
In a bowl add chicken, chili sauce, egg, corn flour, red chili flakes, vinegar, salt, black pepper powder, oil and mix it well.
In a pot heat oil and add marinated chicken. Fry until 80% done. Set aside.
In a bowl add chicken stock, chili sauce, thai chili sauce, oyster sauce, red chili flakes, black pepper powder, salt and mix it well. Set aside.
In a pot heat oil and add ginger, garlic. Cook for 30 seconds. Add green chilies and toss them well. Add chicken and mix it again.
Now add chicken stock mixture and bring it to a simmer. Add slurry and cook until it thickens. Set aside.
In a pot heat oil and add garlic. Cook for a minute. Add capsicum, carrot and cook for 1-2 mins
Add boiled rice and toss it well. Add black pepper powder, salt and toss it well again for a minute. Add green onion and mix it well.
Your Vegetable Fried Rice are ready. Serve them with White Chili Chicken and enjoy.
