Ingredients for Chicken Tikka
Chicken (boneless cubes) 1 kg
Yogurt 1 cup
Ginger garlic paste 1 tbsp
Cayenne pepper powder 1 tbsp
Tikka masala 2 tbsp
Lemon juice 1 tbsp
Red food color 1/2 tsp
Oil (for cooking) 3 tbsp
Heated coal 1 piece
Oil (for smoke) 1 tsp
Ingredients for Green Sauce
Green coriader 1 cup
Mint leaves 1/2 cup
Garlic cloves 3-4
Cumin seeds 1 tsp
Salt 1/2 tsp
Water 1/2 cup
Mayonnaise 1 cup
Ingredients for Tamarind Sauce
Tamarind pulp 2 cups
Sugar 1/2 cup
Cumin seeds 1 tsp
Red chili powder 1/2 tsp
Ginger powder 1 tsp
Red chili flakes 1 tsp
Ingredients for Assembling
Paratha as required
Prepared chicken as required
Cucumber julienne as required
Onion sliced as required
Tamarind sauce as required
Direction
- In a bowl add chicken, yogurt, ginger garlic paste, cayenne pepper powder, tikka masala, lemon juice, salt, and red food color and mix it well. marinate it for 15-20 mins.
- In a pan heat oil and add the marinated chicken. cook until the chicken is fully done.
- Now turn off the flame, and place the heated coal piece in an aluminum cup in the center of the pan. drizzle oil on it cover and smoke for 1-2 mins.
- In a glass jar add green coriander, mint leaves, garlic, cumin seeds, salt, and water and blend it well. Add mayo and mix well with the whisk. set aside.
- In a pan heat tamarind pulp, sugar, cumin seeds, red chili powder, ginger powder. red chili flakes and cook until the sauce thickens.
- On a paratha add layers of prepared chicken, cucumber, and onion and drizzle the prepared sauces. wrap the paratha in a roll shape and serve.
