 Ingredients for Boiled Chanay

Water 7-8 cups

Safaid chanay 3 cups

Ingredients for Chana Masala

Oil 1/2 cup

Cumin seeds 1 tbsp

Black cardamom 2-3

Green cardamom 3-4

Cloves 8-10

Cinnamon sticks 2-3

Oil (chopped) 1 cup

Tomato puree 1 cup

Red chili powder 1 tbsp

Red chili flakes 1 tbsp

Coriander powder 1 tbsp

Salt 1 tbsp

Cumin powder 1 tsp

Yogurt 1 cup

Boiled chanay

Fried plums 7-8

Tamarind 3-4

Ingredients for Boiled Rice

Water 7-8 cups

Cloves 7-8

Green cardamom 3-4

Star anise 2-3

Salt 1 tbsp

Soaked rice 3 cups

Ingredients for Assembling

Prepared chana masala

Boiled rice

Green coriander as required

Lemon slices as required

Green chilies as required

Yellow food color 1/2 tsp

Orange food color 1/2 tsp

Kewra water 1/2 tsp

Direction

In a pot heat water and add chanay. Boil unilt 90% done. Set aside.

In a pot heat oil and add cumin seeds, black cardamom, green cardamom, cloves, cinnamon sticks and cook for a minute.

Add onion and cook for a minute. Add tomato puree, red chili powder, red chili flakes, coriander powder, salt, cumin powder and cook for 2-3 mins. Add yogurt and cook until oil separates.

Add boiled chanay, dried plums, tamarind and cook for 5-10 mins. Set aside.

In a pot heat water and add cloves, green cardamom, star anise, salt and bring it to a boil. Add soaked rice and boil until 80% done. Strain and set aside.

In a pot add layers of prepared chana masala, boiled rice and garnish it with green coriander, green chilies, lemon. Lastly add yellow food color, orange food color and kewra water.

Now cover and steam over low flame for 10-12 mins.

Your Chana Biryani is ready.
